This is an easy and quick recipe with ingredients I'm sure you already have.
1 cup of all purpose flour
1/2 cup of milk (we used non dairy milk)
1/2 cup of water
2 tablespoons of butter (we use coconut butter)
1/2 teaspoon of vanilla extract
1/2 teaspoon of syrup
1 teaspoon of lemon zest
In a large bowl add the flour, eggs and milk. Whisk lightly and slowly add in the water and the other ingredients. Continue to mix well.
Place a lightly oiled pan over medium heat and add the batter. Turn the pan in a circular motion to spread the battle evenly through the pan. Cook for about 2 minutes on each side.
Serve with your favorite fruit or add hints of chocolate or syrup. Enjoy!!
